I am using Dutch potatoes, or if you don’t know what I am talking about – these are the small potatoes you see in stores that you cook with the peel on. The peel of Dutch potatoes, in particular, contains a significant amount of dietary fiber. Fiber is vital in maintaining a healthy digestive system and promoting overall well-being.
Health Benefits of Potatoes
Contrary to popular belief, potatoes can be a nutritious addition to your diet. They are an excellent source of dietary fiber, vitamins C and B6, potassium, and manganese. Additionally, potatoes are rich in antioxidants, which help protect the body against harmful free radicals. When prepared health-consciously, such as roasting instead of deep-frying, potatoes can be part of a healthy balanced diet.
The Power of Oregano
Packed with antioxidants and phytonutrients, oregano possesses anti-inflammatory and antimicrobial properties. Additionally, it may help boost digestion, support the immune system, and relieve oxidative stress. By incorporating oregano into your dishes, like in our Lemon-Oregano Roasted Potatoes, you can elevate the nutritional value while enhancing the flavor profile. Oregano is also easy to grow at home. It does well in containers and backyards.
Nutritional Benefits of Lemon
Lemons are renowned for their high vitamin C content, essential for a healthy immune system. They also contain antioxidants that may protect against cell damage and inflammation. It is also a great way to introduce some acidity to your dish. Potatoes are a bit sweet, so the lemon adds a healthy balance.
These potatoes make an amazing companion for any protein. I usually add them to fish recipes like this Citrus Salmon, but they would go along with chicken or even as a side during weekend cook-out!
